The demo projects just show that the control shows up and is working.
Most users will use WinUIEdit for a reason - the advanced features of Scintilla.
So having demo projects in C++ and C# showing how to use them will make everyones life easier...
Also: showing how to use some of the features might and developers using that might lead to input how to design a developer friendly API.
