Some things we could document:

how the original CLM script was adapted for our purposes
how the GH data was scraped and preprocessed
a section to describe hyperparameters
some tips on using TPU efficiently

Adding to Arun's list, the following thing should be documented too.

Dataset Limitations
A very precise Model Documentation for each of the models available out there and the best use-case for each of them.
