Summary

Ensure we can measure click-through rate and unsubscribe rate from email notifications.

Click-through rate: of emails sent, how many yield clicks on Simpler links?

Unsubscribe rate: of emails sent, how many yield unsubscribes? Maybe needs more thought if the unsubscribe action happens on the website instead of in the email itself.
