Question with MUX 74HC4051

Hello. I'm starting a digital handpan project and thank you for the example codes. However, I have a question. With the MUX 74HC4051, I read that it made it possible to obtain a single response at the same time. Only one channel is active. Do we get a polyphonic or monophonic drums?
