Electron was not updated mostly because of the dependency from https://github.com/capacitor-community/electron.

We should first check if upgrading electron really breaks capacitor-comunity/electron (they seem to say that the last release 5.0.1 is still compatible).

Otherwise we should consider removing the capacitor-comunity/electron dependency, even if this takes more time. Maybe check which is the current recommended way of doing the same thing.
