support for dataset definitions with unlimited dimensions

It would be nice if mandoline had support for implicitly determining the size of dimensions based on the array values that have been written. This would make it simpler to update datasets which grow over time (e.g., along the time dimension) and require less boilerplate in the dataset spec.
