Encounter metadata exportable in a standard export

Expected behavior
If metadata is present on an encounter, all available metadata entered can be exported in a standard export.

Current behavior
Many metadata fields that are present on an encounter don't get exported during a standard export. Here are some examples:

• Spot-mapping platforms need standard export updated #259
• Length data export doesn't always work #266
• Other Values field is not exportable #331
• Encounter.submitterOrganization data missing when exported from cloned Encounters #339
• Incomplete OBIS export data in IoT #381 (related to OBIS exports, but the issue is otherwise the same)
