refactor: classname to pep-8 standard

https://github.com/encode/starlette/blob/master/starlette/config.py#L9 here we are using class name as undefined, which starts with smallcase letter, and PEP-8 suggest to use CapWord convention.
so i guess, better to refactor this name and usages to Undefined
