Katacoda is a nice vehicle for what you are trying to do. And the documentation is not that hot.
You may have missed the additional markdown supported in Katacoda. Specifically the {{copy}} and {{execute}} extensions on the markdown blocks.
In step 1 write: snap install powershell --classic{{execute}} and the environment will copy the command to the terminal widow and hit return.
snap install powershell --classic
Similarly, instead of listing the results of commands, get your student to execute the command and let them inspect the result.
