Rice Pudding

Ris a l’amande

This is a modern version of the ancient Christmas porridge. The person gets the whole almond receives a present.

3 cups (750ml) of milk

½ cup long-grain white rice

½ of one vanilla bean

1/3 cup whipping cream

3 Tbsp sugar

1/3 cup coarsely chopped blanched almonds

1 whole almond

Directions

  1. Over low heat, boil the rice and milk with the vanilla bean until tender. Let cool.

  2. Whip the cream and reserve.

  3. Add the sugar, almonds and reserved whipped cream. Add single whole almond for the almond present. Refrigerate.

  4. Serve with a hot or cold cherry or raspberry sauce.
