Change to maintained fork of hidapi

The current submodule is no longer maintained, and currently contains errors that prevent building on Linux (at least). It was forked and is being maintained by the libusb folks:
https://github.com/libusb/hidapi

I think it should be more or less a drop-in replacement, but I haven't tested it yet.
