could you please add the ability to use a keystroke to update the ranking of the song being played?
and/or alternatively a few menu entries in the mini menu that goes in the status bar (when deadbeef is minimized), to enable rating the current song with just 2 clicks (one to open the menu, another to rate).

I don't think that there's currently a way of adding the rating functions to the icon in the system tray (app minimized) through the UI. Source mods would have to be done, and I'm not sure that DeadBeeF's plugin api supports this.
However, you can assign hotkeys to the rating functions. Edit→Preferences→Hotkeys tab, then click the Add button in the top right, then click on <Not set> next to Action: in the bottom left. From there you can choose (depending on where you wish to apply the function) from Selected Track(s), Current playlist, or Now Playing, then Song rating, then the function you like. After that assign the Key combination you want (and optionally make it a Global hotkey). Click the Apply then the Close buttons in the bottom right.
If you did this for each rating under Now Playing action, assigning to ctrl-1 to 5 keys for example, and made those global hotkeys, then you could use those keystrokes even when the app is minimized (no menu req.).
I added hotkeys for the selected tracks, so it looks like this in my prefs:
