[GenAITooling] Ignore embeddings.json config file prevent sensitive key upload

Currently the gen-ai tooling README.md suggestion creating an embeddings.json file which contains sensitive information such as Open AI or other provider keys.

This file should be ignored an a bit more documented (new secret model format with the secret provider type).
