docker-compose: add lido-dv-exit, validator-ejector
* Comment out mev boost * Adding extra charon relay and non working but correctly structured mev relay (instead of a checkpoint sync url that will confuse people
Also uncomment validator-ejector for now.

Adding labels to be able to filter scraped metrics by unique identifier, this will help in routing alerts to the right team out of the box
