I believe this was supposed to be added, but I can't seem to get the feature to work. On the "all tracks" page, there is no way to sort the order of the tracks. The "albums" page, on the other hand, can be sorted by "recently added" (and is by default sorted in this way). Would it be possible to still add sorting on the "all tracks" page?

It's not possible to add sorting to the tracks page because the Subsonic API doesn't provide a way to specify a sort on the server. The All Tracks page works by iterating through albums first. So only album sorts would be currently possible, but the OpenSubsonic initiative will likely add an endpoint for sorting by tracks eventually, so I plan to add this feature once that's available
