What this PR does
Upgrade to latest mimir-prometheus, which contains one fix: Revert "Merge pull request #15455 from bboreham/compact-cache-symbols". We've linked the upstream PR https://github.com/prometheus/prometheus#15455 to a strong increase in Mimir compactor memory utilization. Therefore it's imperative that we get this fix in.
