I was able to successfully install it from this PR.

Anybody using MacOs (mojave) can follow these steps:

1 - Clone this repo.
2 - Open it in a code editor, paste the changes made by jaghaimo.
3 - open terminal and run 
brew install --build-from-source ./homebrew-virt-manager/virt-viewer.rb
brew install --build-from-source ./homebrew-virt-manager/virt-manager.rb
