Zipkin Dependencies 2.7.0 moves to JDK 11, thanks to a Spark 3.0 upgrade led by @WiktorS. It also includes cron fixes with thanks to @jeqo and @Le1632

This is amazing progress and help wanted further modernize this job, ideally to Spark 3.4/Scala 2.13 and JDK 21. Some of this depends on updating the Elasticsearch driver, which is possible since the next version of Zipkin drops ES 6.x support.
